- 4 lamb leg shoulder chops, cut 1/2-inch thick
- 1 Tbsp. butter
- salt and freshly ground black pepper
- 1/4 c. whipping cream
- 1 Tbsp. Irish whiskey
- watercress or snipped parsley
Directions

1Trim excess fat from chops.

2In a 10-inch skillet, brown chops in hot butter on both sides.

3Sprinkle chops lightly with some salt and pepper.

4Reduce heat.

5Cover and simmer for 15 minutes, adding a little more butter, if necessary.

6Remove chops to a heated serving platter; keep warm.

7Spoon excess fat from pan juices.

8Stir in whipping cream and whiskey.

9Heat gently until hot, stirring up the brown bits in skillet.

10Do not boil. Immediately pour the cream sauce over chops.

11Garnish with parsley or watercress.
