- 1 pound carrots
- 1 pint light cream (half&half)
- 1 1/2 cup sugar
- 4 each cardamom seeds
- 1 x raisins, seedless handful
- 1 x cashew nuts handful
Directions

1Add a little butter to a frying pan and heat to coat the pan.

2Roast cashew nuts until golden brown and add the raisins to the pan for a few seconds.

3Remove the cashews and raisins and keep aside.

4Grate the carrots and add to the pan.

5Add half and half, and heat for about an hour, starting with high heat, stirring, and lowering the heat after the mixture starts boiling.

6Heat until almost dry.

7Add sugar, mix, and continue to cook until damp/dry.

8Remove from stove and add cashews and raisins and cardamoms.
