- 3 c. cooked rice
- 1 1/2 c. cracked crabmeat or coarsely chopped imitation crab
- 1 c. salad dressing
- 1/2 c. finely chopped green pepper
- 1/2 c finely chopped onion
- 1/2 c. finely chopped celery
- leaf lettuce
- fresh parsley (optional)
- lemon slices or wedges (optional)
Directions

1In a bowl combine rice, crab, salad dressing, green pepper, onion and celery.

2Pack into an oiled 6-cup mold.

3Chill at least 6 hours or overnight.

4Unmold onto a bed of leaf lettuce.

5Garnish with parsley and lemon if desired.

6Yields 4 to 6 main dish or 12 to 14 side dish servings.
