Ingredients
- 1 lb black beans, dry
- 8 -10 sprigs cilantro, fresh
- 1 small onion
- 3 cups chicken broth or 3 cups water
- 2 cups white rice
- 12 teaspoon salt
- 1 tablespoon vegetable oil
- 1 -3 tablespoon oil (for frying)
Directions

1For dry beans, soak overnight.

2Drain.

3Add fresh water, salt.

4Boil.

5Cover, simmer until beans are soft.

6About 3 hours.

7Chop onion, pepper, cilantro very fine.

8Saute dry rice in oil for 2 minutes until lightly browned.

9Add 1/2 chopped onion/pepper/cilantro.

10Saute additional 2 minutes.

11Add water/chicken broth.

12Bring to a boil.

13Cover, simmer until rice is tender.

14About 20 minutes.

15Mix rice and beans with remaining pepper/onion/cilantro and saute.

16Mix with some fresh cilantro right before serving.
