- 2 grouse or partridges or pair of rabbits
- 1/2 lb. lean ham
- 2 medium onions
- 1 lb. lean beef
- fried bread
- butter
- salt
- 2 stalks celery, cut into 1-inch lengths
- 3 qt. water
Directions

1Joint your game neatly.

2Cut the ham and onions into small pieces and fry all in butter to a light brown.

3Put into soup pot with the beef, cut into strips, and a little pepper.

4Pour on the water.

5Heat slowly and stew gently for 2 hours.

6Take out the pieces of bird and cover in a bowl.

7Cook the soup 1 hour longer. Strain and cool.

8Drop in celery and simmer 10 minutes.

9Pour upon fried bread in the tureen.
