Ingredients
- 2 lb bratwurst
- 3 bell peppers
- 1 large red onion.
- 3 12 ounce beers. I prefer using a dark beer, Alaskan Amber.
- 1 tbsp lemon juice
- 1 tsp Lawrys seasoned salt
- 1 tsp garlic powder
- 1 tsp onion powder
Directions

1Deseed and sliced the bell peppers and cut the onion into wedges.

2Put the vegetable to a mixing bowl an add 2 or 3 tablespoons of oil.

3Seasoned with a 1/2 teaspoon seasoned salt and 1/2 teaspoon black pepper.

4Then mix well.

5Place the vegetables on 2 large heavy duty sheets of aluminum foil.

6Fold the first piece of aluminum foil up and seal tight.

7Repeat with the second sheet of tin foil.

8Set up your grill with a 3 Zone Fire.

9Add a double thick layer of hot charcoal on the back 3rd of the grill.

10Add a single layer of hot charcoal in the middle 3rd the grill.

11Leaving the 1/3rd in front of you empty and heat free.

12Add the bratwurst and seasonings to the aluminum pan then add the beer.

13Place the pan of bratwurst on the back of the grill directly over the fire.

14When the pan come to a full boil move to the front of the grill.

15And place to the vegetable pack directly over the fire in the back.

16Cook about 10 minutes flip and cook for an additional 10 minutes.

17Remove the vegetables from the fire and place it in a warm oven until game time.

18Allow the brats to stew for at least another 40 minutes (you can go longer if you have the time).

19Flip brats occasionally and add a little water as needed.

20When you're ready to smoke the brats removed from the pan and place on the cool side of the grill.

21then add a handful of 2 of wet hickory wood chips.

22Transfer the beer bath to a crock pot or slow cooker and set on low.

23Close the top vent and smoke for 15 to 20 minutes (you can smoke for hours if you have the time).

24When you finish smoking the brats remove from the grill and put in a crockpot till your ready to serve.

25Drain the juice for the peppers and onions and place in a serving bowl.

26Set up a buffet style with a good variety of mustards.
