  • 1/2 teaspoon cardamom seeds (taken from about 12 green cardamom pods)
  • 1 1/2-inch cinnamon stick, broken into small pieces
  • 1/2 teaspoon whole cloves
  • 2 teaspoons black peppercorns
  • 1 tablespoon plus 1 teaspoon cumin seeds
  • 1 tablespoon plus 1 teaspoon coriander seeds

    Combine the cardamom seeds, cinnamon stick, cloves, peppercorns, cumin seeds, and coriander seeds in a dry skillet and toast over medium heat, shaking frequently, for 2 to 3 minutes, until there is a heady, sweet fragrance.

    Remove from the heat and cool slightly for a few minutes.

    In batches, grind to a powder in a spice grinder or clean, dry electric coffee grinder dedicated to grinding spices.
