  • 1 bagel
  • 2 tsp. olive oil
  • 3 heaping Tbs. hummus or baba ghanoush
  • 1/4 cup chopped lettuce
  • 1 Tbs. diced tomato
  • 1 Tbs. diced avocado
  • 1 Tbs. diced red onion
  • 1 Tbs. chopped black olives or pitted kalamata olives
  • 1/2 tsp. capers
  • 1 Tbs. salad dressing
  • 1 tsp. grated Parmesan cheese, optional

Directions

    Slice a thin portion off the top of a bagel.

    Using your fingers, scoop out some of the insides to make a shell.

    Heat olive oil in a small skillet over medium heat, and saut8E bagel bits scooped from bagel.

    When browned, remove from heat, and set aside.

    Spread hummus or baba ghanoush equally in both bagel shells, and set aside.

    Mix lettuce, tomato, avocado, red onion, olives and capers together with salad dressing.

    Spoon mixture into bagel shell.

    Sprinkle with Parmesan cheese, if using, and top with browned bagel bits.
