Ingredients

  • 3 c. all-purpose flour
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 3/4 tsp. baking soda
  • 1 tsp. baking powder
  • 2 c. combination of shredded yellow squash, zucchini and carrots
  • 3 eggs
  • 1 c. oil
  • 1 tsp. vanilla

Directions

    Grease 24 muffin tins.

    In a large bowl, stir together the dry ingredients and vegetables.

    In separate bowl, beat together the eggs, oil and vanilla.

    Pour over the dry ingredients, stirring just until moistened.

    Pour batter into muffin tins.

    Bake in a 350° oven for 15 minutes.

    Makes 24 muffins.
