- 3 c. all-purpose flour
- 1 1/2 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 3/4 tsp. baking soda
- 1 tsp. baking powder
- 2 c. combination of shredded yellow squash, zucchini and carrots
- 3 eggs
- 1 c. oil
- 1 tsp. vanilla
Directions

1Grease 24 muffin tins.

2In a large bowl, stir together the dry ingredients and vegetables.

3In separate bowl, beat together the eggs, oil and vanilla.

4Pour over the dry ingredients, stirring just until moistened.

5Pour batter into muffin tins.

6Bake in a 350° oven for 15 minutes.

7Makes 24 muffins.
