  • 1 qt. diced onions
  • 1 qt. diced celery
  • 1 qt. water or tomato juice
  • 1/2 tsp. black pepper
  • 4 to 6 qt. ripe tomatoes, peeled and quartered
  • 2 Tbsp. salt
  • 2 Tbsp. sugar
  • 6 peppers (bell, red or green)

    Prepare all ingredients before measuring.

    Cook onions, peppers and celery 20 minutes.

    Add tomatoes and seasonings. Bring to a boil.

    Put into hot pint jars.

    Process at 5 pounds for 10 minutes.
