- 1 lb. chicken cutlets, cut into bite-size pieces
- 1 egg beaten
- Italian-flavored bread crumbs
- 1 stick butter or margarine
- 4 gloves garlic, minced
- 1 Tbsp. lemon juice
- 1/2 lb. linguini or pasta of choice
- olive oil for frying
Directions

1Dip chicken into egg and then bread crumbs.

2Fry in olive oil until golden brown, about 10 minutes.

3Remove from pan.

4Wipe pan. Melt butter on low to medium heat.

5Saute minced garlic in butter for 2 minutes.

6Do not brown.

7Add chicken back into pan.

8Add lemon juice and toss.

9Serve over linguini or choice of pasta.
