Ingredients
- 8 each lamb loin chops
- 3 each garlic cloves
- 2 ounces butter
- 1/4 cup parsley leaves fresh, chopped
- 1/4 cup mint leaves fresh, chopped
- 1 x salt to taste
- 1 x black pepper freshly ground, to taste
- 1 x oranges rind, curls, for garnish
- 1 x mint leaves fresh, for garnish
Directions

1Trim the fat from the chops.

2Cut garlic cloves into slivers.

3Brush chops with butter.

4Make small cuts on the top of the chops and poke with garlic and mint.

5Place chops in a roasting dish covered with foil, sprinkle with parsley and season to taste.

6Cover chops with an additional piece of foil and tuck down edges.

7Roast at 375F (190C) for 35 minutes.

8To brown, remove top foil for last five minutes of roasting.

9Garnish with fresh mint and orange curls.
