- 2 lb. potatoes
- 8 unpeeled garlic cloves
- 1 1/2 tsp. salt
- freshly ground pepper
- 1/4 c. virgin olive oil
Directions

1Cover potatoes and garlic with cold salted water.

2Bring to boil, partly covered.

3Cook 30 minutes or until tender.

4Remove potatoes and garlic; boil the water until it is reduced to 1 cup. Peel potatoes and garlic (mash or rice) and whisk in enough potato water to bring potatoes to a thick creamy consistency.

5Season with salt and freshly ground pepper.

6Heat the olive oil.

7At the table, drizzle desired amount over each portion.

8Serves 4.
