Garlic Mashed Potatoes

  • 1/4 cups Garlic (whole Cloves)
  • 2 pounds Red Potatoes
  • 1/2 cups Milk
  • 1/4 cups Heavy Cream
  • 3 Tablespoons Butter

    1. Place a single layer of garlic cloves on a sheet of heavy-duty aluminim foil and wrap tightly.

    2. Roast in a 400 degree (F) preheated oven for approximately 45 minutes or until soft.

    3. Unwrap and let cool to touch.

    4. Peel cloves and set aside.

    5. Wash and rinse potatoes under cold water.

    6. Peel potatoes, if desired.

    7. In a large saucepan or pot filled with water, bring red potatoes to a slow boil for approximately 20 minutes.

    8. Remove from heat and drain.

    9. In the pan or a bowl combine the potatoes, peeled and roasted garlic cloves, and all other ingredients and mash.

    10. Serve warm.
