Garlic Mashed Potatoes

  • 3 lbs. all-purpose potatoes, peeled and cubed
  • 4 whole cloves garlic
  • 3/4 cup fat-free milk
  • 1/2 cup margarine or butter
  • salt and pepper to taste
  • Chopped parsley, for garnish

    Mix potatoes and garlic in large saucepan; add water to cover.

    Heat to a boil.

    Reduce heat; simmer for 20 minutes or until potatoes are tender.

    Remove from heat; drain.

    Place potatoes and garlic in large bowl.

    Heat milk and margarine or butter in same saucepan over low heat until spread melts.

    Beat potatoes with electric mixer, gradually adding milk mixture until smooth.

    Season with salt and pepper to taste.
