Garlic Parmesan Cilantro Risotto

Ingredients
- 3 tbsp butter
- 2 tbsp finely diced onion
- 5 small cloves garlic, finely minced
- 1 1/2 cup arborio rice
- 6 cup chicken stock
- 1/4 tsp salt & pepper
- 1/4 cup parmesan cheese
- 1 cup cilantro, chopped
Directions

1In a large skillet, add butter, onions and garlic.

2Saute over medium heat until onions are translucent.

3Add rice and saute, stirring until rice is slightly toasted.

4Add 1 cup of chicken stock stir constantly until liquid is absorbed.

5Keep adding chicken stock 1/2 cup at a time stirring constantly until all chicken stock has been used and absorbed into the rice.

6This process is slow and usually takes around 30 minutes or so.

7Well worth the wait though!

8Once all stock has been used, and rice is al dente, thick and creamy add parmesan cheese, salt & pepper.

9Stir until well combined.

10Fold in cilantro and serve warm.
