Garlic Pork

Ingredients

  • 250 ml white wine
  • 3 garlic cloves (finely chopped)
  • 1 pinch of black pepper
  • 1 tbsp of pimento paste for marinading meat.
  • 2 Bay leaves
  • 1 dash of piri-piri sauce
  • 500 grams pork tenderloin (cut into squares)
  • 50 ml olive oil
  • 1 large bunch of coriander (roughly chopped)
  • 2 Roughly crushed garlic cloves

Directions

    Mix all the ingredients for the marinade with the pork.

    Let it sit in fridge over night or 3-4 hours before cooking.

    Drain the meat from the marinade once it's time to cook.

    Reserve the marinade to add later.

    Heat the oilve oil and add the garlic.

    Fry for 2-3 minutes on medium to high heat.

    Lower the heat and add the pork and bay leaves and simmer for about 15 minutes on a medium.

    Add the marinade and cook for a further 10-15 minutes.

    Add the coriander 5 minutes before turning the heat off.

    Mix every so often so it doesn't burn.

    once done serve with your choice of side dish.

    Potatoes or rice is good.
