Garlic Potatoes

- 1 lb. new potatoes (smallest you can find)
- 1 tsp. olive oil
- 4 cloves garlic, peeled and thickly sliced
- 1 Tbsp. minced shallot
- 1/8 tsp. salt
- pepper to taste
Directions

1Scrub potatoes well. If large, cut into thick slices. Steam for about 7 minutes or until firm but slightly tender. Pour oil into casserole dish. Add steamed potatoes, garlic, shallot, salt and pepper.

2Toss to mix well. Bake uncovered in a preheated oven at 350° for 30 minutes. Stir a couple of times during baking so potatoes cook evenly.
