Garlic Roasted Potatoes

- 4 large baking potatoes, peeled
- 4 cloves garlic
- 6 Tbsp. butter
- 3/4 c. grated Parmesan cheese, divided
- salt to taste
- pepper to taste
Directions

1Cut potatoes in half lengthwise; slice 1/4 inch thick.

2Rinse in cold water; drain thoroughly.

3Mince garlic and put through press.

4Melt butter in small saucepan; add garlic and cook on medium heat for 1 minute.

5Place potatoes in large bowl; add butter/garlic mixture, half the Parmesan cheese and seasonings. Stir until well coated; pour into greased shallow baking dish. Top with remaining cheese; bake at 400°, uncovered, until golden brown, about 30 minutes.

6Do not stir or turn while baking.
