  • 20 cloves garlic chopped
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon paprika sweet or smoked but not hot
  • 1 pinch saffron
  • 1 cup chopped tomatoes
  • 6 cups chicken stock
  • 2 eggs beaten

Directions

    Place garlic and oil in a large saucepan and cook over medium heat for 2 minutes but do not brown the garlic - browning the garlic will make for a bitter soup.

    Add paprika and saffron and cook for another 2 minutes. The mixture may stick to the saucepan.

    Add tomatoes and cook for another 2 minutes.

    Add chicken stock and bring to a boil.

    When soup is boiling, reduce heat, stir in eggs and return to simmer.
