- 10 cloves garlic
- 1/2 Tbsp. flour
- 2 Tbsp. butter
- 1 qt. strained chicken soup
- few drops Tabasco
- salt and pepper to taste
- 4 eggs
- 1 c. Mozzarella cheese
- 1 Tbsp. parsley
Directions

1Mash garlic as fine as possible.

2Add flour and saute in butter.

3Add soup stock and boil for 15 minutes.

4Strain and return to fire.

5Add seasoning.

6With soup at a boil, slip the eggs in gently one at a time so the yolk does not break.

7When the eggs are poached, serve the soup with one egg in each bowl.

8Add parsley and cheese on top.
