- 120 grams Chocolate
- 100 ml Heavy cream
- 3 Egg yolk
- 50 grams Butter
- 30 grams Cake flour
- 30 grams Cocoa Powder
- 3 Egg white
- 100 grams Sugar
Directions

1Preparations: Melt the chocolate and butter separately.

2Boil the cream.

3Add the boiled cream to the melted chocolate and mix.

4Add the egg yolks and mix.

5Then add the melted butter and blend together well.

6Mix together the flour and the cocoa powder, sift into the mixture and mix everything together.

7In a separate bowl, gently whip the egg whites.

8Add the sugar in 2-3 batches while whipping.

9Whip until peaks stand and a meringue is formed.

10Add the meringue to the Step 4 batter and gently mix.

11Pour into the mold about 80% full and bake in a oven preheated to 140F celsius for 50-60 minutes.
