- 2 lb. gator tail, cut into 1-inch cubes
- 1 c. buttermilk
- 1/2 c. beer
- 1/2 tsp. salt
- 1/2 tsp. pepper
- dash of garlic salt
- 2 c. flour
- oil for deep frying
Directions

1Marinate cubed gator tail in a mixture of buttermilk and beer for 1 hour or overnight.

2(Refrigerate.)

3Drain; coat with seasoned flour.

4Fry in deep fat over medium heat 10 minutes.
