Ingredients

  • 3 large tomatoes
  • 1 clove garlic
  • 2 Tbsp. lemon juice
  • 4 Tbsp. chopped parsley
  • 3 Tbsp. chopped chives
  • 1/2 c. olive oil
  • 1 chopped green pepper
  • 2 chopped onions
  • 1 large cucumber, peeled, seeded, diced
  • salt and pepper
  • dash of Tabasco
  • croutons
  • 2 1/2 c. tomato juice

Directions

    Combine tomatoes, garlic, lemon juice, parsley, chives, tomato juice and olive oil.

    Puree in an electric blender.

    Add green peppers, onions and cucumber.

    Season to taste with salt, pepper and Tabasco.

    Chill thoroughly.

    Serve with small bowls of croutons, chives, onions, peppers and cucumbers for garnishing.
