Ingredients
- 2 onions, chopped
- 2 cloves garlic, minced
- 4 green peppers, chopped
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. paprika
- 1/3 c. olive oil
- 1/3 c. vinegar
- 1 1/2 c. water
- 1 cucumber, peeled and sliced very thin
Directions

1Combine the onions, garlic, green peppers and tomatoes.

2Force through a sieve or puree in a blender.

3Add salt, pepper and paprika.

4Add the olive oil gradually, beating steadily.

5Add the vinegar and water and stir well.

6Place in the refrigerator to chill for at least 2 hours.

7Use a wooden or glass bowl, not metal. Add the cucumber slices before serving.

8If desired, slices of toast rubbed with garlic may be served with the Gazpacho.

9Serves 6.
