  • 4 large, very ripe tomatoes, seeded and diced
  • 1 large cucumber, peeled, seeded and small diced
  • 1 medium onion, finely diced
  • 1 c. tomato (or V-8 juice)
  • 1 Tbsp. wine vinegar
  • 3 Tbsp. olive oil
  • 1 small clove garlic, mashed or minced
  • salt and pepper to taste

    Mix the tomatoes, cucumber, onion, green pepper, tomato juice, vinegar,

    oil and garlic; add salt and pepper to taste. Puree if desired.

    Chill

    Serve in small glasses or spoon into bowls.
