  • 4 cups tomato juice
  • 1/2 cup finely chopped onions
  • 1 clove garlic minced
  • 1 bell pepper medium, minced
  • 2 teaspoons honey optional
  • 1 cucumber medium, peeled, seeded and minced
  • 2 scallions minced
  • 1/2 lemon
  • 1 lime
  • 2 tablespoons red wine vinegar
  • 1 tablespoon basil finely-chopped
  • 1 tablespoon tarragon finely-chopped
  • 1/2 teaspoon cumin
  • 1/4 cup fresh parsley minced
  • 3 tablespoons olive oil
  • salt to taste
  • pepper to taste
  • cayenne to taste
  • 2 cups fresh tomatoes diced

Directions
