Gazpacho

Ingredients

  • 1/4 c. minced green onions
  • 1 c. thinly chopped cucumbers
  • 1 minced clove garlic
  • 1/2 c. chopped green pepper (optional)
  • 1 large can tomato juice
  • 2 Tbsp. red wine vinegar
  • dash of Tabasco or to taste or dash of cayenne pepper
  • salt and pepper to taste

Directions

    Put veggies in food processor or blender and blend to desired chunkiness, not too fine.

    Add juice, Tabasco and vinegar and mix. (I just pour veggies into pitcher/container and add liquid.) Chill very well.

    Serves about 8.
