Ingredients
- 1 large onion, diced
- 1 cucumber, diced
- 1 1/2 green peppers, diced
- 2 c. ripe tomatoes, diced
- 2 cloves garlic
- 1 tsp. basil
- 1/2 tsp. Tabasco
- 1/4 c. red wine vinegar
- 3 Tbsp. extra virgin olive oil
- 1 qt. V-8 juice
Directions

1Saute diced onion briefly in the olive oil.

2Use garlic press to squeeze the garlic juice into the onion while it is sauteing. When dicing tomatoes, collect juice.

3Mix the onions with diced tomatoes, cucumber and peppers.

4Add vinegar, Tabasco, basil, any juice and V-8.

5Refrigerate until thoroughly chilled.

6Serve with garlic bread and appropriate wine.
