Ingredients

  • 4 medium tomatoes (unpeeled), diced
  • 1 cucumber (unpeeled), diced
  • 1/4 c. green pepper, diced
  • 1/2 c. onion, diced
  • 1 clove garlic, minced
  • 8 oz. V-8 or tomato juice
  • 2 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

    Soup:

    Combine tomatoes, cucumber, green pepper, onion and garlic in a bowl.

    Place 1/2 of this mixture in your electric blender.

    Process until smooth.

    Return to bowl; add oil, vinegar, salt and pepper.

    Chill 4 to 6 hours.

    Garnish with toasted bread crumbs, if desired.
