- 1 (28 oz.) can whole tomatoes, undrained
- 1 c. finely chopped green bell peppers
- 1 c. finely chopped cucumbers
- 1 c. croutons
- 1/2 c. chopped onion
- 2 Tbsp. dry white wine
- 2 Tbsp. olive oil
- 1 Tbsp. ground cumin
- 1 Tbsp. vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Place tomatoes, 1/2 cup peppers, 1/2 cup cucumbers, 1/2 cup croutons, 1/4 cup onion and remaining ingredients in blender or food processor.

2Cover and blend on medium speed or process until smooth.

3Cover and refrigerate at least 1 hour.
