Ingredients
- 2 (16 oz.) jars Chi-Chi brand salsa
- 1/2 c. diced yellow bell pepper (1/2-inch)
- 1/2 c. diced cucumber (1/4-inch)
- 2 Tbsp. lime juice
- 2 Tbsp. sliced green onions
- 1 lb. fresh or frozen medium raw shrimp, peeled and deveined
- 2 Tbsp. chopped fresh cilantro
- hot cooked rice or pasta
- garlic tortilla chips
- avocado slices, if desired
Directions

1In a large skillet, combine salsa, yellow pepper, cucumber, lime juice and green onion.

2Bring to a boil, simmer over medium heat.

3Stir in shrimp.

4Cook and stir 3 to 5 minutes or just until shrimp turns pink.

5Stir in cilantro.

6Serve over hot cooked rice or pasta with garlic tortilla chips.

7Garnish with avocado, if desired.
