Ingredients

  • 2 (16 oz.) jars Chi-Chi brand salsa
  • 1/2 c. diced yellow bell pepper (1/2-inch)
  • 1/2 c. diced cucumber (1/4-inch)
  • 2 Tbsp. lime juice
  • 2 Tbsp. sliced green onions
  • 1 lb. fresh or frozen medium raw shrimp, peeled and deveined
  • 2 Tbsp. chopped fresh cilantro
  • hot cooked rice or pasta
  • garlic tortilla chips
  • avocado slices, if desired

Directions

    In a large skillet, combine salsa, yellow pepper, cucumber, lime juice and green onion.

    Bring to a boil, simmer over medium heat.

    Stir in shrimp.

    Cook and stir 3 to 5 minutes or just until shrimp turns pink.

    Stir in cilantro.

    Serve over hot cooked rice or pasta with garlic tortilla chips.

    Garnish with avocado, if desired.
