Gelled Mango Salad

  • 1 large can or jar pureed mango, drained (reserve juice)
  • 8 oz. cream cheese, softened
  • 3 small boxes lemon gelatin
  • 3 c. reserved juice and water
  • juice of 1 lime

Directions

    Blend mango and cream cheese.

    Heat water and juice to boiling; add gelatin and stir to dissolve.

    Add lime juice. Combine with mango-cream cheese mixture and blend well.

    Chill until set in mold or glass casserole dish.

    Serves 8.
