German Green Bean Soup

  • 5 c. fresh green beans
  • 6 c. water
  • 3 Tbsp. minced onion
  • 1 1/2 Tbsp. salt
  • 1/8 tsp. pepper
  • 3 c. diced potatoes
  • 3 c. milk
  • 1 c. evaporated milk
  • 1/2 c. butter

Directions

    Snap and cut beans.

    Combine beans, water, salt and pepper in large kettle.

    Boil until beans are about tender.

    Add potatoes. When vegetables are done, add milk, cream and butter.

    Return to boiling point and serve.

    Makes approximately 8 to 10 servings.
