  • 3 eggs
  • 12 cup low-fat milk
  • 12 cup flour
  • 1 pinch salt
  • 2 tablespoons butter, melted
  • syrup (optional) or butter (optional) or powdered sugar (optional) or fruit (optional) or cooked sausage (optional) or jam (optional)

Directions

    Preheat oven to 450* F. Spray a glass pie plate with nonstick spray and rub it with a paper towel to coat well.

    Spray and rub a second time (this makes it release much better).

    Beat the eggs in a batter bowl.

    In a small bowl, combine flour and salt; add to eggs in 4 additions, mixing well after each.

    Add milk in 2 additions, stirring after each.

    Note: don't beat too hard or use a whisk--too much beating or incorporating too much air will prevent it turning out well.

    Stir in butter; pour into pie plate.

    Place in center of oven and bake at 450* F for 10 minutes.

    Turn temperature down to 350* F and bake an additional 20 minutes.

    Remove from oven; cut into wedges and serve hot with desired accompaniments.
