  • 10 large potatoes, cut in quarters
  • 2 onions, cut in halves
  • 4 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • olive oil (as needed for frying)
  • applesauce (as desired)

Directions

    Chop potatoes, onions, eggs, flour and baking powder in a food processor and chop.

    Put a generous amount of olive oil in a pan and heat.
  3. 3
    When the oil is hot drop a ladle of the potato mix into it and press flat.
  4. 4
    Turn when the edges turn brown.
  5. 5
    Serve hot together with applesauce.

    Not to be made ahead or frozen.
