German Potato Salad

  • 6 large potatoes, diced (salted)
  • 5 slices bacon, diced
  • 1/2 large onion, diced
  • 2Tbsp. vinegar
  • 2 Tbsp. sugar
  • 1/4 c. water
  • 2 c. Cheddar cheese or to taste

Directions

    Cook potatoes until nearly done. Drain (don't overcook).

    Cook bacon and onion until crispy.

    Don't drain grease.

    Add the vinegar, sugar and water. Bring to a boil for 2 minutes.

    Pour over potatoes. Cover with cheese.
