  • 3 to 4 lb. chuck or butt beef roast
  • 1 c. vinegar
  • 1 c. water
  • 1/2 tsp. black pepper
  • 1/4 tsp. whole cloves
  • 2 bay leaves
  • 1/8 tsp. ground ginger
  • 1 medium onion, sliced thin
  • 1/2 lemon, sliced thin
  • 1/4 c. sugar
  • salt, pepper and shortening

    Brown meat on all sides in hot shortening.

    Season with salt and pepper.

    Cover skillet or kettle and simmer slowly 2
