- 1 c. sugar
- 1 c. firmly packed brown sugar
- 1 c. margarine or butter, softened
- 1 c. oil
- 1 egg
- 2 tsp. vanilla
- 3 1/2 c. all-purpose or unbleached flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1 tsp. salt
- 1 c. quick cooking rolled oats
- 1 c. coconut
- 1 c. crisp rice cereal
- 12 oz. pkg. (2 c.) chocolate chips
Directions

1Heat oven to 350°.

2Line cookie sheets with foil.

3In large bowl, beat sugar, brown sugar and margarine until light and fluffy. Add oil, egg and vanilla.

4Beat well.

5Lightly spoon flour into measuring cup.

6Level off and add flour, baking soda, cream of tartar and salt.

7Stir in oats, coconut, cereal and chocolate chips.

8Press scant cup of dough into a 6-inch circle on foil-lined cookie sheet.

9Repeat with remaining dough, placing cookies at least 2 1/2 inches apart.

10Bake at 350° for 18 to 22 minutes, or until light and golden brown.

11Cool completely on cookie sheets to prevent breaking.

12Makes 8 large cookies, 32 servings.
