  • 1/4 cup sugar
  • 1 1/2 tsp kosher salt
  • 1/2 - 1 tsp cayenne pepper
  • 1/2 tsp ginger powder
  • 2 1/2 cups whole almonds
  • 1 - 2 tbsp finely minced candied ginger
  • 1 tbsp water
  • 1 tbsp honey
  • 1 tsp olive oil

Directions

    1. Preheat oven to 350 deg F. Spread almonds on a baking sheet and toast for about 15 - 20 min stirring often.

    2. Stir together the sugar, salt, cayenne pepper, and ginger in a small bowl and set aside.

    3. In a pan, heat the water, honey, and olive oil until the mixture boils. Add the toasted almonds and stir until they are well coated.

    4. Add the sugar mixture and the minced ginger and stir well over medium heat. Allow the sugar to melt and carmelize over the nuts.

    5. Spread onto a baking sheet lined with parchment, and allow to cool.
