Ingredients

  • 1/2 cup chopped onion
  • 2 teaspoons crushed garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 cup chicken broth
  • 1 cup frozen peas
  • 1/2 cup chopped tomato
  • 1 tablespoon minced cilantro
  • 3/4 cup couscous

Directions

    Saute onion and garlic in olive oil over medium heat until tender.

    Stir in cumin and chile powder, and cook for 1 minute.

    Add broth, peas, tomato and cilantro, and bring to a boil.

    Stir in couscous, cover and remove from heat.

    Let stand for 5 minutes.

    Fluff with a fork before serving.
