- 1/2 cup chopped onion
- 2 teaspoons crushed garlic
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 cup chicken broth
- 1 cup frozen peas
- 1/2 cup chopped tomato
- 1 tablespoon minced cilantro
- 3/4 cup couscous
Directions

1Saute onion and garlic in olive oil over medium heat until tender.

2Stir in cumin and chile powder, and cook for 1 minute.

3Add broth, peas, tomato and cilantro, and bring to a boil.

4Stir in couscous, cover and remove from heat.

5Let stand for 5 minutes.

6Fluff with a fork before serving.
