- 1 1/2 cups brown sugar
- 1 2/3 cups all-purpose flour
- 1 2/3 cups self-rising flour
- 1/2 tsp baking soda
- 1 tbsp ground ginger
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 cup butter, softened
- 2 None large eggs
- 1 cup buttermilk
- 3/4 cup honey or golden syrup
- None None FOR THE LEMON ICING
- 4 1/2 tbsp butter, softened
- 2 tsp lemon zest
- 2 tbsp lemon juice
- 2 cups powdered sugar
Directions

1Preheat oven to 325°F. Grease and line a deep 8 inch square cake pan with parchment paper.

2Sift brown sugar, flour, baking soda and spices into the bowl of an electric mixer. Add remaining ingredients and beat until combined. Beat on medium speed until mixture is smooth and pale. Transfer to prepared pan and bake for 1 hour 30 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins then turn out onto a wire rack to cool completely.

3Meanwhile, to make the lemon icing, beat butter and lemon zest together. Gradually beat in lemon juice and powdered sugar. Spread over cold cake.
