Ginger Carrot Cake

- 2 c. flour
- 2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 4 beaten eggs
- 3 c. finely shredded carrots
- 3/4 c. cooking oil
- 3/4 c. dried fruit bits
- 2 tsp. grated ginger root or 2 tsp. ground ginger
Directions

1Grease and flour (2) 9 x 1 1/2-inch round baking pans or (1) 13 x 9 x 2-inch pan.

2Stir together in a large bowl flour, sugar, powder and soda.

3In another bowl combine eggs, carrots, oil, fruit and ginger.

4Add egg mixture to flour mixture.

5Stir until combined and pour into prepared pans.

6Bake at 350° for 30 to 35 minutes, or until toothpick inserted near center comes out clean.

7Cool on wire racks 10 minutes.

8Remove from pan and thoroughly cool cakes on racks.

9Good with Fruit Flavored Cream Cheese Frosting.
