  • 3/4 lb. boneless chicken breast, 1-inch cubes
  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 c. sliced mushrooms
  • 1 c. bean sprouts
  • 1 c. trimmed snow peas
  • 1/4 c. unsalted dry roast cashews
  • 1 Tbsp. minced fresh ginger
  • 1 Tbsp. reduced-salt soy sauce
  • 3 c. cooked brown rice
