- 12 cup soya sauce
- 1 teaspoon cornflour
- 1500 g chicken pieces
- 1 teaspoon chopped gingerroot
- 12 cup water
- 2 teaspoons sugar
- 2 tablespoons oil
- 425 g pineapple chunks
- 2 tablespoons lemon rind
Directions

1put soya sauce, sugar, cornflour and lemon rind in a large bowl.

2add chicken, coat with sauce.

3leave 1 hour.

4drain chicken.

5fry both sides in oil.

6add ginger, whole tin of pineapple and water.

7simmer gently 1 hour.

8serve with rice.
