  • 12 cup soya sauce
  • 1 teaspoon cornflour
  • 1500 g chicken pieces
  • 1 teaspoon chopped gingerroot
  • 12 cup water
  • 2 teaspoons sugar
  • 2 tablespoons oil
  • 425 g pineapple chunks
  • 2 tablespoons lemon rind

    put soya sauce, sugar, cornflour and lemon rind in a large bowl.

    add chicken, coat with sauce.

    leave 1 hour.

    drain chicken.

    fry both sides in oil.

    add ginger, whole tin of pineapple and water.

    simmer gently 1 hour.

    serve with rice.
