  • 1/2 cup butter, chopped
  • 1/3 cup brown sugar
  • 3/4 cup honey
  • 3 1/4 cups all-purpose flour
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 2 tsp baking soda
  • 1 None large egg, lightly beaten, plus 2 egg whites
  • 1 tsp vanilla extract
  • 3 cups powdered sugar, sifted
  • None None assorted food coloring and sugar balls, to decorate

Directions

    Preheat oven to 350°F. Grease 2 baking trays and line with parchment paper.

    Stir butter, brown sugar and honey over low heat until smooth. Let cool for 5 mins.

    Sift flour, spices and baking soda into a large bowl. Add butter mixture, whole egg and vanilla and stir until combined. Turn out onto a lightly floured work surface and knead until smooth. Roll out to 1/4 inch thick, cover with plastic wrap and chill for 10 mins.

    Cut out shapes from dough using cookie cutters. Place on prepared trays and bake for 10 mins, or until light golden brown. Let cool on trays.

    Meanwhile, to make the icing, whip egg whites until frothy. Gradually beat in powdered sugar, 1 tbsp at a time, until stiff peaks form. Divide icing between 2-3 small bowls and tint with food coloring. Decorate cookies by spreading or piping icing onto cookies. Decorate with sugar balls.
