Ingredients

  • 1/2 lb. ginger root, peeled and chopped
  • 1/4 c. fresh mint leaf, chopped
  • 2 Tbsp. grated lemon zest
  • 1/2 c. honey
  • 1 c. boiling water
  • 3 c. pineapple juice
  • 1 c. grapefruit juice
  • 1 tsp. pure vanilla extract
  • 1 qt. sparkling water

Directions

    Combine ginger, mint, lemon zest and honey in a heatproof pitcher.

    Pour boiling water over mixture; stir well and let steep for 30 minutes.

    Strain and discard solids.

    Combine ginger liquid with pineapple and grapefruit juices and vanilla.

    This mixture can be frozen or stored in the refrigerator up to 7 days.

    To serve, fill a tall glass with ice, then half fill with sparkling water.

    Fill the rest with ginger mixture and stir.
