Ginger Lemon Asparagus

- 1 1/2 lbs asparagus
- 1 small lemon, zested and juiced
- 2 tablespoons coconut oil
- 1/2 teaspoon fennel seed
- 1/2 teaspoon mustard seeds
- 3 -4 garlic cloves, chopped in small pieces
- salt and pepper
- 1 -2 tablespoon freshly grated ginger
Directions

1Rinse and drain the asparagus spears, then chop into 1 inch pieces, making sure that the top inch of the spear isn't cut so that they retain their nice shape.

2Heat coconut oil on medium heat in a skillet. Add mustard and fennel seeds to hot oil and stir for 20-30 seconds.

3Add garlic and ginger. Cook for about 1 minute.

4Stir in asparagus. Saute for about 4 minutes.

5Add lemon juice, stir, and serve.

6Salt and pepper to taste.
