  • 2 Tablespoons Fresh Ginger, Grated
  • 50 milliliters Fresh Orange Juice
  • 200 grams White Sugar, Divided
  • 2 Tablespoons Orange, Zest Grated
  • 3 Eggs
  • 250 milliliters Buttermilk
  • 350 grams Flour
  • 1 pinch Salt
  • 1 teaspoon Baking Powder

Directions

    Prepare a saucepan. Add ginger, orange juice, and stir in 1/4 of the sugar. Cook for a few minutes, until sugar is completely melted. Turn off heat, stir in orange zest, and set aside.

    In a bowl, mix eggs with remaining sugar until it doubles its volume. Add buttermilk and mix again.

    Blend flour with salt and baking powder, and gradually add the mixture to the eggs, mixing after each batch. Now add the ginger mixture.

    Heat oven to 200°C (390°F). Fill muffin tray 2/3 full and bake for about 15-20 minutes.
