  • 34 cup unsalted butter
  • 34 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 14 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 12 cups all-purpose flour
  • 13 cup milk
  • 3 nectarines, pitted and sliced
  • 2 tablespoons flour
  • 2 tablespoons light brown sugar
  • 2 tablespoons chopped crystallized ginger
  • 1 tablespoon butter

    Preheat oven to 350 degrees.

    Streusel for topping:.

    Mix 2 tbsp four and 2 light brown sugar, 2 tbsp crystallized sugar and 1 tbsp butter in a small bowl.

    Sprinkle on top.

    Evenly coat a 10 inch springform pan with nonstick cooking spray.

    Beat butter, sugar, baking powder, ginger and salt in large bowl with mixer on medium high speed until smooth.

    Beat in eggs and vanilla until blended.

    Reduce mixer speed to low, beat in flour and milk just until combined.

    Spread batter evenly into prepared pan.

    Place nectarine slices on top.

    Sprinkle Streusel topping on top.

    Bake 45 to 50 minutes until wooden pick inserted in center comes out clean.
